The problem they have, and it has been laboured here many times before is the staff resource pool is simply not strong enough. You only need look to the council hygiene ratings to see how the departure of some of their best people hit home.

Personally, I would do the deal with McKenzie meats and include a good lock-in period, so we have that all-important foundation to build on.

We still have some good long-term staff but simply not enough!

How anyone can compare this complex business to a coffee shop retailing a few cakes and heating up sandwiches is beyond me when you get it wrong in this complex business the result is death quite somewhat different to a cold pot of tea I'd say #Ecoli0157

Store managers are on a little more than £8.50 but nowhere enough for what they do, a wage structure is needed and not someone coming and bringing all his mates like NC did and taking it all and having the ordasity to say no one can have a pay rise but we will give you a bonus with unachievable goals

Most food outlets/coffee shop chains with a central kitchen have the same challenges with perishables, traceability and food safety the only extra thing to deal with is the raw meat. From a planning point of view sales forecasting and minimising waste is the key to success but this really isn’t rocket science. I disagree and new management can have a big impact in this type of business. I wouldn’t mind betting the previous management have made the whole store ordering process way too complex.

You have raw perishable food being stored and served in the same building as cooked high risk ready to eat food that needs holding at critical temperatures there's allergens to label that will change daily depending on what 2 sisters drop in there use by dates that will replace frozen best before dates there's product recall traceability to adhere to there's ensuring that the rota complies with food safety so the staff are not crossing from raw to cooked and you haven't even started to think about taking any money yet but no you absolutely bang on its hardly complex. Why don't you get it one man one change at the top is not going to save this business it's like throwing a deck chair off the titanic they need people at store level

I'm told that some store managers are now responsible for 2 stores. This can only be due to the fact that they are seriously short of good people. In retail I'm sure that this is normal but the complexity of this business surly can't sustain part time managers dipping in and out throughout the week so who is going to open and run the 8 new factory shops. The brand isn't strong enough to drive the sales they need solid structure at store level it's all about the people

There's more shares now and the high street shops still need sorting but the factory shops are booming and with 3-8 more planned this financial year, so hopefully some potential.

This was 90p in 2015 when they did £1m ebitda on sales of £37m. Now they are on £44.6m with adj ebitda at -£0.4m. Surely when the new management get in and sort out the £3.3m central overhead costs this should fly again.
