Calf’s liver for me, one of my favourites and just as Jeffian describes.

Mrs E Snr occasionally serves us lambs liver with onions, which I can confirm is both leathery and grainy. She has never knowingly undercooked anything, which is fine for the stews and braised dishes she is brilliant at, but limp waterlogged asparagus and cauliflower are much less of a draw.

It is most likely to be lamb when cooked with onions and gravy, A333, though care needs to be taken as it can get a bit 'leathery' if overcooked. Pig is regarded as inferior in both taste and texture. I love calf's liver mes'en, with crispy bacon and I like crisped sage leaves. *smacks lips*.

I'm very partial to a bit of liver mes'en. What type do you favour with onions, A333? Lamb, pig or calf?

As to the rest -
* ate a lot of game on the farm and trout/salmon in the days you were allowed to keep it not 'catch & release' (what's the point)
* we weren't in the Caviar bracket and not particularly taken by it now, though we do use those little jars of fish eggs sometimes to make a fish dish a bit more fancy
* not goat's milk but I did once have milk fresh from the cow when I injured myself on another farm and was laid up. It was a bit like drinking warm cream.
* (senior) school food was ok. We ate in "house" (we lived in separate houses of about 50) and our cook was ok. In my last term (I was 18!) we had a rather comely lass cooking and on the last day of term she rushed up, kissed me and gave me a box of chocolates, which shows you how 'on the ball' I was* about these things.

There, I think that about covers the lot.

Roight - I might go and dust off my bike / pump up tyres / check cycle computer etc so it is ready to go if I decide to go tomorrow.

Cars need a wash too I note and front hedge needs first cut of the year. Jobs are stacking up!
