The SCART connection was a fallback - there is no (obvious) way to get into manual channel set up. There must be a way, but there are no buttons/keys which have legends even remotely related to it, on the remote or the machine.

zz. I wouldn't bother with scart cables. I tried and if there was an improvement in quality I couldn't see it and they just complicate things. Just plug the Sky cable into the Ant In and then the Out to the TV. With the VCR remote you probably need to get into Manual Channel Set via Menu and set number 6 to 68. At least that's where mine is. Good luck.

I've got an oldish VCR - a Panasonic NV-HD100B. I've just got Sky, and I'd like to be able to record from Sky.

However, I've no longer got any idea how to tune the video - I've obviously done it in the past, but I can't find the instructions any more, and there are no obvious controls related to tuning anywhere on the machine.

That's problem 1.

Problem 2. I have the Sky box set-up as channel 6 on my TV (and would like the same on the video - see problem 1). I'd also like to be able to record via SCART. I've plugged the Sky box into AV2 on the video - set the recorder to record from AV2 - and it records nothing - until the TV (which is connected from the VCR via AV1) is switched on, and then it records whatever I'm watching on the TV! Surely this should be possible - record from AV2, regardless of what's on AV1? I have a sinking suspicion that AV1 and AV2 are actually wired directly together rather than being separate I/O channels - it would be handy if someone could confirm/deny this.
