We are in T2. Infection rate here should be low but Brummies have caravans in the area and bring their virus infections with them.

I wish they would shut the caravan sites down like they did in the first lockdown. We are pretty much locked down anyway. I see the farmer across the road and go fishing with my mate all suitably social distanced.

Very occasional shopping trips late at night and any shops that are busy are avoided.

As for lockdowns, I'm not sure what type we are in, as no one is taking any notice.

I'm gonna go with the flash fry as per Nigella's chef, and give it a few minutes in the oven to negate the worst of the raw look.

That vid made it look very tempting. Not that Nigella had anything to do with the cooking.

Hopefully the Melini 2019 Chianti 13% will take the edge off it :-)

It doesn't like overcooking, it goes tough. " options, fast fry like steak or long slow cooking like braising steak.

I don't know if the marinade will change things, it might. You could try slicing some off thin before cooking then flash fry, That way it will cook through quickly but not overcook. It might work or it might not.

I've never tried skirt. And until I saw that Nigella vid, had never heard of it.

But have a couple of pieces in marinade to give it a try. It's a bit awkward, as I will eat anything that isnt actually moving, but the wife likes well done. Problems!


Still, can always wash it down with a bottle of chianti :-)

I used to eat a lot of skirt beef, it's actually better tasting than more expensive steak but it needs short cooking over high heat. Never tried that marinade although I use tamarind in Thai cooking and Soy does tenderise meat nicely.

Slots work well but you need to get used to the particular supermarkets system. I find Tesco's to be very easy. If you use them and get stuck I can probably help you out. Dog might be able to because he uses them.

Heads up, if you haven't already realised Tesco have released all slots up to new year.

I've only just spotted this, nearly missed out on the week before Christmas week, the week after Christmas I got a slot on the normal day but late afternoon rather than morning.

If you haven't booked them do it NOW.
