22/11/2011 09:57 | Val, you are up bright and early. I can understand your post which must indicate a distinct inadequacy of alcohol last night. OT/OT You might be able to assist in my quest for the perfect alcoholic ginger beer. The first brew ended up with a sg of 990, too dry. I used a champagne yeast as in the recipe I found. I had to back sweeten with sorbitol to make it drinkable. Next I tried an ale yeast again sg 990. Same problem. I need a yeast that will produce 5% alcohol. That will have enough capacity to condition it and not leave it too dry. Using the yeasts I've tried if I bottled at say 1005 the bottles would explode or it would end up too sour.
