The William Hill news will certainly get a lot of attention and will focus minds regarding more M &A in the sector.

However he is another theory, in general the US markets are higher valued than London.

For the gaming sector its even better as there is effectively baked in growth as regulation rolls across the various states over the next 4 or 5 years. Despite the focus on sports some states are taking it as an opportunity to regulated online casino to. We dont really know how big it will get in the US as once a market has opened it takes time to reach its mature market potential.

So the other way for GVC to unlock value is not to accept any bid now that might undervalue the businesses long term potential but rather to list the business in New York now. Id expect to several such listings of European companies over the next couple of years.
